CABRITO ROAST
1 KID GOAT WITH HAMS & SHOULDERS
1 STICK OF UNSALTED BUTTER
2 CLOVES OF FRESH GARLIC, MINCED
1 TSPN OF LIME JUICE
1 BOTTLE OF RED MUDTM
Melt butter and add garlic, lime and Red MudTM and heat thoroughly. Place kid goat on the roasting rack with hams and shoulders on the bottom. Pour the sauce over the meat and cover. Cook @ 325 for approximately 25 mins per pound basting often with the sauce in the pan. The last 45 minutes uncover and baste often to keep the meat from drying out. Carve and serve with pico de gallo and avocado.
